France - Languedoc-Roussillon
What We Say
A luscious organic Sauvignon Blanc from the Loire Valley with real character.
What They Say
Careful harvest and clement weather after a dry and warm summer are the elements that every winemaker dreams of. After the harvest, the grapes are kept in the cold in order to bring out all the aromas. The juice is selected and then fermented at a low temperature (again, to optimize the flavours) before being left to age for a few months before bottling. The goal is to preserve the refreshing acidity of the wine while achieving a beautiful length of finish.
About The Producer Domaine de l'Aumonier
Sophie and Thierry Chardon established Domaine de l'Aumonier in 1996; starting with nothing they worked their 10 hecatres without proper equipment, without clients and with little money. But with a joint passion for wine making and Thierry's know-how they made a success of the domaine.
