From the renowned Condrieu appellation in the Northern Rhône Valley, this white wine is a true aromatic experience with its intense aromas of exotic fruits. Its elegance and richness on the palate make it an exceptional wine to pair with dinner.
Origin : Selection of Condrieu parcels on the biotite granite terroir. On this soil, Viognier expresses itself with a lot of minerality and elegance. "Les Chaillets" is the local name for the terraces. Soil : granite with biotites. Grape variety : viognier. Viticulture : planted in high density (8 000-10 000 vines per ha). Treatments are limited to a maximum depending on the weather, no insecticides to preserve biodiversity, little fertilizer and only organic. Control of vigor and yields, leaf thinning, green harvesting for a better maturation of the grapes. Disbudding in spring. Vinification and maturation: manual harvest, traditional and parcel-based vinification. Use of as few oenological products as possible (indigenous yeasts). Vinification (alcoholic and malolactic fermentation) and maturation 50% in wooden tuns of 30 hectoliters and 50% in Burgundy barrels without racking, 8 months on lees. Blending of the different parcels before bottling. Olfactory tasting : Nose of stone fruits (apricot, peach), honey and flowers. Some notes of sweet spices and grilled dried fruits. Taste : Rich and greedy mouth. The slender finish is marked by the mineral freshness of the granite and gives great depth to this wine. Cellaring : To be enjoyed young for its fruity aromas (3 to 4 years) or for its evolving aromas (between 6 and 10 years). Pairing : Fine fish, shellfish and langoustines (sweetbreads with morels).
