Vinification takes place in stainless steel vats with manual punching of the cap, with a vatting time of up to 30 days. Bottling takes place after 12 to 16 months' ageing in French oak barrels, without fining or filtration. A noble deposit may appear.
In the spring of 1993, the Sicardi and Sergi families acquired the Clos Saint Vincent estate, an ancient French vineyard which has held its Bellet AOC since 1941. The revival of this estate has given it new impetus, starting with the extension of the vineyard (now 10 hectares) and adaptating production to focussing on quality grapes, cultivating the land organically and biodynamically. Clos St Vincent wines are a standout feature of wines from the South of France.
