About The Producer Cihuatan

In the Mayan language, Cihuatán means "the land next to the sleeping woman", a reference to the Guazapa Mountain whose silhouette outlines a woman –a goddess, in fact, who is said to have conferred wealth and fertility on the surrounding land. This ancient legend marks the beginning of the story for Cihuatán rums which, as faithful Salvadoran ambassadors, highlight the country's abundance and craftsmanship. From growing the sugarcane to aging in oak casks to bottling, the brand oversees every stage of rum production to serve up an immersive journey into the legends of El Salvador. The Cihuatán distillery was formed in the early 2000s with the dream of concocting a rum that would become an ambassador of El Salvador. The country's sole distillery controls every aspect of production, crafting rums from local ingredients that express all the wealth and complexity of the landscape. This absolute independence, combined with the expertise and insatiable curiosity of its staff, enables the distillery to market high-quality, artisanal rums, each of which marvelously illustrates the rich heritage of El Salvador. Located in the valley of the same name, the Cihuatán distillery carries out all the steps necessary to distill its rum in a single location. As a result, the team, composed of 15 enthusiasts, controls the quality of the product from sugarcane harvesting and distilling to aging and bottling. What makes this artisanal, small-scale distillery unique is its self-sufficiency. In addition to producing its sugarcane and molasses, it even generates its own electricity from bagasse, the fibrous byproduct of sugarcane.
