A very open nose with notes of citrus fruit, on the palate it is beautifully rounded with aromas of peach and exotic fruit.
Brilliant light yellow. Fragrant smoky aromas backed up by the zesty and characterful flavours from the Sauvignon Blanc grape. An exceptional Pouilly-Fumé.
Today, Domaine des Fines Caillottes is run by the sons and grandsons of Jean Pabiot, Alain and Jérôme. Planted with Sauvignon grapes, the estate spans 42 hectares, divided into 40 plots of varying sizes, and spread across 5 different municipalities within the Pouilly-Fumé appellation. The terroirs, primarily clay-limestone, offer a variety of soil types, including “des Caillottes” (limestone pebbles), marls with small oyster fossils (flat fossilized stones), and flint. This diversity of terroirs imparts complexity to the wines produced by the estate. They practice sustainable development and farming methods and are certified TERRA VITIS - for respecting the environment, people, and wines produced; as well as, “Haute Valeur Environnementale” (H.V.E level 3) for preserving their biodiversity.
